Apple Pie Cookies
Created by the fabulous Katie Stymiest (@cakedbykatie on Instagram), these easy halfway-homemade apple pie cookies are sweet, salty, and full of classic apple pie flavour! A chewy sugar cookie cup filled with the most incredible E.D.SMITH® apple pie filling and topped with a decadent drizzle of caramel sauce and sea salt. It's the perfect cookie to ensure Santa saves you a spot on the “Nice” list this year.
Ingredients
- 1 cup (227g) butter, softened
- 1 ¼ (250g) cups granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 ½ cups (300g) all purpose flour
- ½ tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. fine sea salt
- 1 can E.D.SMITH® apple pie filling
- 6 tbsp. salted caramel sauce
- optional: pinch of flakey sea salt
Directions
- Preheat the oven to 350ºF and prepare a 12-cavity cupcake pan with non-stick baking spray. Make sure the sides of each cavity are well covered.
- Combine the softened butter and sugar in a large mixing bowl and mix together until smooth and creamy.
- Add in the egg and vanilla extract and mix until fully combined.
- Measure in the flour, baking soda, baking powder, and salt and mix until a soft dough forms.
- With a large 2 tablespoon cookie scoop, scoop the cookie dough into the cupcake pan.
- Bake for 14-16 minutes or until the edges are lightly golden brown.
- Remove from the oven and, while still hot, gently press the center of each cookie down with a wooden spoon, shot glass, or something similar in size to create a cup-like shape.
- Allow the cookies to fully cool in the pan before removing them. If the cookies are difficult to remove, run a sharp knife around the edges to release any caramelized sugar.
- Fill each cookie cup with the prepared apple pie filling. If the apple pie filling is quite chunky, chop it on a cutting board or cut it up roughly with scissors in the can.
- Top each apple pie cookie with a drizzle of salted caramel sauce and, if desired, a sprinkle of flaky sea salt. Enjoy!
