No-Bake Triple Berry Pudding Trifle

This no-bake berry pudding dessert is a summer favourite layered with silky vanilla pudding, jammy E.D.SMITH TRIPLE FRUITS® Pie Filling, and soft butter cookies. Light, creamy, and the perfect dessert to share.

Ingredients
  

Pudding Layer

  • 1 package 102 g instant vanilla pudding mix
  • cups cold milk
  • ½ cup sour cream
  • ½ cup whipped cream, from whipped cream mixture below

Whipped Cream

  • 1 cup whipping cream (35%)
  • 1 tbsp icing sugar
  • ½ tsp vanilla extract

Assembly

  • 1 can 540 mL E.D.SMITH TRIPLE FRUITS® Blueberry Raspberry Blackberry Pie Filling
  • 1 package butter cookies, approximately 250 g

For Garnish (optional)

  • Fresh berries
  • Additional whipped cream
  • Crushed butter cookies
  • Fresh mint leaves

Directions
 

  • In a medium bowl, whisk together the pudding mix and milk until smooth and beginning to thicken. Refrigerate while preparing the whipped cream.
  • In a medium bowl, beat the whipping cream, icing sugar and vanilla until medium peaks form.
  • Fold ½ cup of the whipped cream and the sour cream into the pudding mixture until smooth and fully combined.
  • Spread a thin layer of pudding mixture in the bottom of a 6–7 cup serving dish.
  • Arrange a layer of butter cookies over the pudding and spoon over approximately half of the fruit filling.
  • Spread a layer of whipped cream over the fruit filling.
  • Repeat with another layer of cookies and the remaining fruit filling.
  • Finish with the pudding mixture and sprinkle with some crushed cookies, reserving a few for garnish. Cover and refrigerate for at least 2 hours to allow the cookies to soften and the layers to set.
  • Before serving, garnish with fresh berries, additional whipped cream, crushed cookies and fresh mint, if desired.

Tips

  • This dessert is best enjoyed the day it is assembled, once the cookies have softened and the layers have chilled.
  • Thin butter cookies soften beautifully in the pudding mixture while still maintaining some texture. Shortbread cookies or vanilla wafers also work well.
  • Fresh berries added just before serving bring brightness and a beautiful seasonal finish.
